Apple Mango Chutney

Ingredients

  • 2 Apples
  • 3 large ripe mangos (ripe)
  • 100 g raisins
  • 2 fresh green chili peppers
  • 300 ml fruit vinegar
  • 2 tbsp light mustard seeds
  • 150 g cane sugar
  • 1 tsp salt
  • 0.25 tsp cayenne pepper

    Peel, quarter and core the apples; peel the mangoes and cut the flesh from the pit. Halve the chilies, remove seeds, rinse, and slice into rings. Combine all ingredients in a pot, bring to a boil, then simmer for about 40 minutes while stirring until thickened. Transfer to hot-washed jars, seal immediately. Place lids on top and let cool for 15 minutes before turning over; allow to cool completely. Store in a cool, dark place. Keeps for about 3 months.
