Nectarine Chutney with Ginger

Ingredients

  • 1 kg nectarines
  • 4 shallots
  • 2 EL freshly grated ginger
  • 100 g raisins
  • 100 g cane sugar
  • 0.25 l white wine vinegar
  • 1 chili pepper
  • 1 tsp turmeric
  • 20 ml cognac

Instructions

    Briefly boil the nectarines, shock them in cold water, peel, pit and cut into pieces. Peel the shallots and finely dice them.

    Combine both with ginger, raisins, sugar, vinegar, chopped chili pepper and turmeric in a pot, stirring constantly until it boils. Simmer for about 20 minutes until thickened. Add cognac and pour into prepared jars.

    Seal tightly and let cool upside down. Then flip over and allow to chill completely.
