Ingredients
- 20 g Ginger
- 2 tsp peppermint tea
- 300 g pineapple flesh
- 350 ml passion fruit juice
- 1 Lime (juice)
- 4 tbsp agave syrup (more if desired)
- a handful of mint
- 150 g raspberries

Peel the ginger and slice it. Add it to a pot with the tea, pour over 500 ml boiling water, and let steep for about 5 minutes. Dice the pineapple flesh and finely puree it. Combine the puree with the passion fruit juice, lime juice, and agave syrup in a saucepan. Add the tea and heat together for about 10 minutes, but do not boil.

Meanwhile, rinse the raspberries. Rinse the mint, shake dry, and pluck the leaves. Add both to the hot punch, taste, sweeten if needed, and serve in glasses.
