Ingredients

  • 250 g pineapple (canned)
  • 100 g butter
  • 100 g sugar
  • 3 eggs
  • a pinch of salt
  • 250 ml buttermilk
  • 300 g flour
  • 2 tsp Baking powder
  • 80 g ground poppy seeds
  • 1 muffin tin (12 cups)

Instructions

    Preheat the oven to 180°C. Line the muffin tin cavities with baking paper.

    Drain the pineapple well and chop into chunks. Melt the butter and let it cool slightly. Whisk the melted butter with sugar, eggs, and a pinch of salt, then stir in the buttermilk. In another bowl combine flour, baking powder, and poppy seeds; fold in the wet mixture until just combined, then fold in pineapple pieces. Fill the muffin cups and bake for about 30 minutes. Remove, let cool slightly in the tin, then take out the muffins to cool completely.
