Star-shaped spice cake with apple cream

Ingredients

  • 300 g almonds
  • 80 g flour
  • 3 tbsp chocolate sprinkles
  • 8 eggs
  • 250 g powdered sugar
  • 1 lemon (organic, zest)
  • 1 tsp cinnamon
  • 1 tsp gingerbread spice
  • 1 packet vanilla sugar
  • breadcrumbs (for the mold)
  • 250 g powdered sugar
  • 2 tbsp lemon juice
  • 8 chocolate cookies
  • 50 g couverture chocolate
  • 200 g whipping cream
  • 2 packs stabilizer
  • 1 pack vanilla sugar
  • 1 apple (peeled, finely grated)
  • 1 tsp lemon juice

Instructions

    Preheat oven to 180°C. Separate the eggs. Grind the almonds. Beat half of the powdered sugar with the yolks until pale and fluffy. Mix the almonds with flour, chocolate sprinkles, lemon zest, cinnamon, gingerbread spice and vanilla sugar; fold in. Whisk the egg whites with the remaining powdered sugar very stiff and fold into the almond mixture.

    Grease a star-shaped mold (diameter ~28 cm) and dust with breadcrumbs. Bake the cake for about 50-60 minutes. Remove and cool on a rack.

    Whisk powdered sugar with lemon juice to make a thick glaze, coat the cake and garnish with chocolate cookies. Melt couverture in a bain-marie, spread thinly on a marble slab, quickly cut into rolls with a spatula. Sprinkle chocolate rolls over the center of the cake.

    Beat the cream with stabilizer and vanilla sugar until stiff; mix in grated apple with lemon juice and fold in.

    Cut the cake into pieces and serve with the cream.
