Pineapple-Papaya Smoothie

A pineapple-papaya smoothie with coconut: this drink covers your daily vitamin C needs and boosts the body's natural defenses.

Ingredients

  • 2 tbsp coconut chips
  • 250 g pineapple (1/4 pineapple)
  • 300 g small papaya (1 small papaya)
  • 0.5 lime
  • 250 g soy yogurt
  • 200 ml coconut water (Tetra Pak)
  • Ice cubes

Instructions

    Lightly toast the coconut flakes in a dry pan over medium heat, then let them cool on a plate.

    Peel the pineapple thoroughly with a sharp knife, cut out the core and dice the fruit into large chunks.

    Halve the papaya, remove the seeds with a spoon, peel it and cut into large cubes. Squeeze 2 tsp of lime juice from the lime.

    Blend the pineapple and papaya with soy yogurt, coconut water, lime juice and 6-8 ice cubes in a stand mixer until smooth, then sprinkle with toasted coconut flakes.
