Ingredients

  • 1 clove garlic
  • 5 stems basil
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp olive oil
  • 3 fully ripe tomatoes
  • 2 balls buffalo mozzarella
  • 8 whole‑grain toasts

Instructions

    Peel the garlic. Wash and dry the basil, then together with garlic, salt, pepper, and olive oil pulse in a food processor until finely chopped.

    Wash the tomatoes, cut off the stems, and slice thinly. Drain the mozzarella and slice it thinly as well. Quickly toast the whole‑grain toasts in a grill pan over medium heat.

    Spread basil pesto on each toast, then layer with tomato and mozzarella slices. Cut diagonally and serve immediately or pack for a snack.
