Pineapple Amaranth Bars

Pineapple‑amaranth bars: a nutty snack made from pineapple and amaranth. This low‑fat bar is perfect for curbing cravings.

Ingredients

  • 100 g dried pineapple
  • 2 tbsp butter
  • 100 g liquid honey
  • 2 Tbsp whole‑grain sugar
  • 0.5 lime
  • 100 g rolled oats
  • 50 g amaranth pops
  • 4 Tbsp chopped almonds

Instructions

    Cut the pineapple into small cubes.

    Bring the butter, honey and sugar to a boil.

  3. 3.

    Squeeze out the lime juice.

  4. 4.

    Stir 1 Tbsp lime juice, oats, amaranth, almonds and pineapple cubes with the sweetened butter.

    Spread the mixture about 2 cm thick onto a baking sheet lined with parchment paper using a damp rubber spatula, and bake in a preheated oven at 150 °C (fan‑forced 130 °C, gas: level 1–2) on the middle rack for 15–18 minutes.

    While still warm cut into bars and let cool on a work surface. Store in airtight containers.
