Perfect for snacking and gifting! Healthy muesli bars from Spoonsparrow are easy to prepare and always delicious!

Ingredients

  • 125 ml water
  • 500 g honey
  • 200 g rolled oats
  • 200 g wheat flakes
  • 100 g coconut flakes
  • 50 g sesame seeds
  • 300 g dried fruit (e.g., apricots, plums, apples, cranberries)
  • 1 tsp vanilla essence
  • 1 tsp cinnamon
  • a pinch of salt
  • 2 eggs (separated)

Instructions

    Warm the water with the honey in a pot until the honey dissolves.

    Meanwhile, mix the flakes with coconut flakes and sesame in a large bowl. Dice the dried fruit finely and add it along with the spices. Pour the honey‑water over the mixture. Add the two yolks, stir well, and let the batter rest for 10 minutes.

    Preheat the oven to 140 °C (fan). Line a baking tray with parchment paper.

    Beat the egg whites until stiff peaks form and fold them into the muesli mixture. Spread the batter evenly on the tray. Cover with cling film and press it flat with a rolling pin. Remove the film, bake for 20–30 minutes until golden brown, then cut hot into strips.
