Ingredients
- 1 handful wild garlic
- 1 tbsp salt
- 1 tbsp sugar
- 100 ml vinegar (10% acidity)
- 2 Bay leaves

Wash and drain the wild garlic sprouts, then mix them with salt in a bowl and let sit overnight. Drain again and combine with vinegar, sugar, and bay leaves in a pot; bring to a boil and simmer for 2–3 minutes. Remove from heat and pour into a jar.

Store for about 10 days in the refrigerator.
