Pickled Harzer Cheese

A wonderful recipe for the cheese buffet: Harzer cheese pickled by Spoonsparrow

Ingredients

  • 7 tbsp dry white wine
  • 100 ml apple cider vinegar
  • Salt
  • ground pepper
  • 2 tsp sugar
  • 6 tbsp sunflower oil
  • 100 g pearl onions (canned)
  • 1 large carrot
  • 400 g small round Harzer cheese (or other sour milk cheese)
  • smooth parsley
  • 1 tbsp Pumpkin seeds

Instructions

    Drain the pearl onions. Peel and finely grate the carrot. Bring wine, vinegar, salt, pepper, sugar, and oil to a boil; add the pearl onions and grated carrot, bring back to a boil, then remove from heat and let steep for about 5 minutes. Cut the cheese as desired and pour the brine over it; allow to soak for several hours, preferably overnight.

    Wash the parsley, shake off excess water, and pluck the leaves from the stems. Fold the parsley and pumpkin seeds into the marinade.
