Ingredients

  • 800 g firm‑cooking boiled potatoes (from the day before)
  • 3 tbsp clarified butter
  • 300 g pork sausage
  • 300 g cocktail tomatoes
  • 100 g Edam cheese
  • Salt
  • black pepper (freshly ground)
  • Sweet Paprika Powder
  • 2 tsp dried herbs de Provence

Instructions

    Peel and slice the potatoes. Heat the clarified butter in a large pan and fry the potato slices, turning occasionally, for about 10 minutes. Remove the sausage from its casing, cut it lengthwise into halves and then into ~1 cm thick slices. Wash the cocktail tomatoes and quarter them. Grate or dice the cheese.

    Season the fried potatoes with salt, pepper and paprika. Fold in the sausage and fry briefly. Arrange the tomato quarters on top of the potatoes and sprinkle with the herbs de Provence. Distribute the cheese over everything, cover with a lid and let the cheese melt over low heat for about 5 minutes.
