Potatoes with Herb Quark

Potatoes with herb quark from Spoonsparrow are great when you want something quick and uncomplicated!
Ingredients
- 1 kg potatoes
- 1 Spring onion
- 10 g Dill (0.5 bunch)
- 10 g chives (0.5 bunch)
- 10 g parsley (0.5 bunch)
- 500 g Low-fat quark
- 3 tbsp sparkling mineral water
- 4 tbsp linseed oil
- Salt
- ground pepper
Instructions

Wash potatoes thoroughly and place them in a pot, cover with just enough water and bring to a boil covered. Cook for 20–25 minutes over medium heat.

Meanwhile wash the spring onion. Finely chop the white and light green parts, cut the green into rings. Wash herbs, shake dry and chop leaves.

Whisk quark with sparkling mineral water and linseed oil until smooth. Season with salt and pepper. Stir in spring onions and herbs.

Drain potatoes, let them cool briefly, then peel. Serve the boiled potatoes with the herb quark.
