Potatoes with Paprika Quark

Ingredients

  • 1 kg potatoes
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 tbsp oil
  • 200 ml water
  • 500 g quark
  • Salt
  • ground black pepper
  • 2 tbsp parsley

Instructions

    Wash the potatoes and cook them with their skins in salted water for about 25 minutes.

    Clean, wash, halve, seed, and dice the bell peppers. In a small pot heat the oil, sauté the pepper cubes, then add the water and simmer for about 8 minutes until the peppers are tender and most of the liquid has evaporated. Stir the warm pepper mixture into the quark. Season with salt and pepper and sprinkle parsley on top.

    Peel the potatoes and serve them together with the quark cream.
