Pickled Cucumbers with Turmeric

Ingredients

  • 600 g salad cucumber (1 cucumber)
  • 400 ml fruit vinegar
  • 1 heaping tsp salt
  • 3 tbsp sugar
  • 2 tsp Turmeric powder

    Peel the cucumber, cut lengthwise in half, scoop out seeds with a spoon and slice into ~0.5 cm wide strips.

    Bring vinegar with 125 ml water, salt, sugar, and turmeric to a boil; add cucumbers, simmer briefly and let steep for about 1 day.

    Remove cucumbers with a slotted spoon and fill jars. Reboil the cucumber liquid and pour over the cucumbers. Seal and allow to mature for about 1 week before use.
