Pear Quark with Nuts

Ingredients
- 60 g mixed nuts (e.g., almonds, hazelnuts and walnuts)
- 1 tbsp butter
- 3 tbsp sugar
- a pinch of cinnamon
- 2 pears
- 1 tbsp Lemon Juice
- 1 Vanilla bean
- 100 ml whipping cream
- 300 g quark

Coarsely chop the nuts. Lightly caramelize the butter with 1-2 tbsp sugar, then stir in the nuts. Remove from heat, season with cinnamon, spread on parchment paper to cool, and chop again.

Peel the pears, quarter them, remove the core, and cut the quarters into small cubes. Mix with lemon juice and half of the extracted vanilla pulp.

Whip the cream with the remaining sugar until stiff peaks form, then fold in the rest of the vanilla and stir into the quark. Spoon into glasses, top with pear cubes, sprinkle nuts on top, and serve.
