Ingredients

  • 500 g Green Asparagus
  • Salt
  • 3 eggs
  • 1 untreated lemon (zest)
  • 200 g goat cream cheese
  • 200 ml whipping cream
  • pepper (ground)
  • nutmeg
  • 150 g grated hard cheese (e.g., goat cheese)

Instructions

    Knead flour, salt, butter pieces, egg and sour cream quickly into a smooth dough. Wrap in cling film and chill for 30 minutes.

    Oil the tart pan and preheat the oven to 200°C fan.

    Roll out the dough on a floured surface and line the tart pan with it.

    For the topping peel the lower third of the asparagus and cut off the ends. Split or quarter the spears. Blanch in boiling salted water for 2-3 minutes, shock, drain well, then spread on the dough base. Whisk together eggs, lemon zest, goat cream cheese and cream; season with salt, pepper and nutmeg. Pour over the asparagus and sprinkle with grated cheese. Bake in the oven for about 40 minutes until golden brown.

    Crush pepper in a mortar. Rinse dill, shake dry, pluck and roughly chop. Mix with pepper and lemon juice into oil. Drizzle the tart with this oil before serving.
