Pear Pancakes

The Pear Pancakes from Spoonsparrow bring autumn to the table.
Ingredients
- 75 g spelt whole‑grain flour
- 125 ml milk (3.5% fat)
- 1 tsp organic lemon zest
- 2 Eggs
- 1 pear
- 5 g butter (about 1 tsp)
- 20 g coconut blossom sugar (about 1 tbsp)
- 1 tsp cinnamon

Whisk the flour with the milk and lemon zest until smooth. Quickly fold in the eggs and let the batter rest for about 20 minutes.

While the batter rests, wash, halve, core, and slice the pear into very thin strips. Melt the butter in a large pan (about 28 cm diameter). Add the pear slices, cook 1–2 minutes until lightly golden, turning once. Pour the pancake batter over the pears and bake on low heat for about 3 minutes until golden brown. Flip the pancakes and finish cooking for another 1–2 minutes. Transfer to a wooden board, dust with sugar and cinnamon, cut into two equal pieces, and serve.
