Ingredients

  • 250 g flour
  • 1 tsp Baking powder
  • 0.5 tsp Salt
  • 3 tbsp sugar
  • 2 Eggs
  • 500 ml Buttermilk
  • 2 tbsp liquid butter
  • blueberries
  • crème fraîche
  • red jam
  • maple syrup
  • butter (for cooking)

Instructions

    Mix the flour with the baking powder, salt and sugar in a mixing bowl. Whisk together the eggs, buttermilk and liquid butter. Add to the dry ingredients and stir only until the wet ingredients are incorporated. Let the batter rest for about 30 minutes.

    Preheat the oven to 80°C (176°F) on both top and bottom heat.

    Heat a non-stick pan with a little butter and pour in two-thirds of the batter, cooking eight pancakes one after another; leave some space when pouring as the pancakes will rise. From the remaining batter bake sixteen small pancakes for the 'ears'.

    Keep the finished pancakes warm in the oven. For serving place one large and two small pancakes on a plate to form a bear head; use crème fraîche and blueberries for eyes, a blueberry for the nose, and jam to shape the mouth. Drizzle maple syrup over the pancake bear face.
