Filled Pancakes

Sweet filled pancakes from Spoonsparrow – a delicious breakfast recipe for sweet morning lovers.

Ingredients

  • 120 g wheat flour type 1050
  • 1 tbsp whole grain sugar
  • ½ tsp baking powder
  • 1 pinch salt
  • 200 ml Milk (3.5% fat)
  • 1 egg
  • 10 g plant oil (for frying)
  • 100 g cream cheese
  • 4 tbsp apple sauce
  • 1 tbsp honey

Instructions

    Combine flour, sugar, baking powder and salt in a bowl; whisk in milk until a thick batter forms. Beat the egg, add it to the batter and stir well. Let rest for about 20 minutes.

    Heat a little oil in a hot non-stick pan; pour about 1 tbsp of batter per pancake. Cook 1–2 minutes until golden, flip and cook another minute. Remove from pan and repeat until all batter is used, about 16 small pancakes. Keep warm at 80 °C if desired.

    For the filling, mix cream cheese with apple sauce and honey until smooth. Spread half of the pancakes with the mixture, top each with another pancake to form a sandwich. Place two filled pancakes on a plate and serve with extra apple sauce if desired.
