elderflower pancakes

Ingredients

  • 500 ml milk
  • 4 eggs
  • Salt
  • 200 g Flour
  • 100 g instant oats
  • 4 tbsp oil (for frying)
  • 8 washed elderflower buds
  • a little sugar (for dusting)

Instructions

    Whisk together milk, eggs, salt, flour and oats to make a batter and let it rest for 15 minutes. Pour 1/2 tablespoon of oil into a pan, add the batter and press one elderflower bud into the batter. Trim the stems as close to the bud as possible.

    Cook the pancake on both sides until golden yellow and keep warm. Repeat with the remaining pancakes. Serve dusted with sugar or spread with elderflower syrup.
