Ingredients
- 80 g buckwheat flour
- 80 g wheat flour
- Salt
- 1 egg
- 1 tsp Baking powder
- 320 ml milk
- 8 slices pork belly bacon
- maple syrup (optional)

Whisk the two flours with a pinch of salt, the egg, baking powder and the milk into a smooth batter and let rest for about 15 minutes.

In a pan fry 2-3 slices of bacon until crisp, then pour in one ladleful of batter. Tilt and swirl the pan to spread the batter evenly and cook until golden brown. Flip with a spatula and cook the other side until golden. Remove and keep warm at 80°C in the oven. Repeat with remaining bacon and batter. Serve the pancakes drizzled with syrup if desired.
