Pear Compote with Cream and Cinnamon

- 4 pears
- 1 pinch saffron
- 150 ml white wine
- 50 g honey
- 1 stick cinnamon
- 100 ml whipping cream (at least 30% fat)
- 100 g yogurt

Peel the pears, cut them into wedges and remove the cores, leaving the stems if possible. Add the saffron with the white wine, honey, and cinnamon stick to a pot and bring to a boil. Add the pear wedges and poach for 3 minutes. Carefully lift them with a slotted spoon, drain, and let cool. Reduce the liquid slightly and allow it to cool; remove the cinnamon stick.

Whip the cream until stiff peaks form and fold into the yogurt. Divide the pears among four glasses, pouring some of the reduced liquid over each. Spoon the cream mixture on top and drizzle with remaining liquid. Garnish with cinnamon sticks and serve.
