- 5 ripe peaches
- 0.5 Vanilla bean
- 0.375 l milk
- 40 g flour
- 3 egg yolks
- 70 g sugar
- 4 slices brioche
- maple syrup (for drizzling)
- chocolate sprinkles

Slice the vanilla bean, add to milk and bring to a boil once, then remove from heat and let steep for 10 minutes. Whisk flour with egg yolks, strain out the vanilla bean, and vigorously whisk the flour‑egg mixture into the milk. Return to the pot, bring to a boil again, pour into a bowl and allow to cool.

Wash peaches, halve them, remove pits. Slice one peach into wedges. Fill a pastry bag with the cream and pipe it onto eight peach halves. Arrange brioche slices on plates, place two peach halves on each, sprinkle with chocolate sprinkles, and drizzle generously with maple syrup.
