Chocolate Cake

Ingredients

  • 1 sponge cake base (or sponge made from 4 eggs)
  • 125 g butter
  • 150 g powdered sugar
  • 100 g cocoa powder
  • 1 egg
  • 2 tbsp rum
  • 1 packet vanilla sugar
  • 200 g white couverture chocolate
  • 2 tbsp butter
  • 100 g hazelnut crunch
  • 50 g dark couverture chocolate
  • 12 truffle pralines

Instructions

    Beat the butter with a hand mixer until fluffy, fold in the egg on high speed, then whisk in powdered sugar and cocoa by spoonfuls, along with rum and vanilla sugar. Cut the cake base 1-2 times crosswise and fill with the cream. Melt the white couverture chocolate over warm (not boiling) water, coat the cake, and sprinkle hazelnut crunch around the edge.

    Melt the dark couverture chocolate in a small heatproof bag over warm water, cut off an edge, and decorate the cake with dark chocolate. Arrange the pralines decoratively on top of the glaze, press lightly, let the cake dry for at least ½ hour, then refrigerate for about 2 hours.
