Chocolate Pudding with Vanilla Sauce

- 500 ml milk
- 120 g dark chocolate
- 1 tsp orange zest (unprocessed)
- 3 egg yolks
- 40 g sugar
- 1 tbsp Cornstarch
- 200 ml milk
- 100 ml whipping cream
- 0.5 Vanilla bean
- 1 tsp Cornstarch
- 2 tbsp sugar
- 2 egg yolks
- Chocolate sprinkles (for garnish)
Instructions

Heat the milk (except for 4-5 tbsp) with broken chocolate pieces and orange zest while stirring. In a bowl whisk the egg yolks with sugar until frothy, then add the cornstarch and remaining milk.

Stir in the hot chocolate milk, return to pot, and let it bubble once more to thicken.

Remove from heat, beat briefly, pour into chilled molds, cool, and refrigerate until fully set.

For vanilla sauce reserve 3-4 tbsp of milk. Bring remaining milk with cream and split vanilla bean to a boil, then remove from heat. Mix cornstarch and sugar; whisk with reserved milk and egg yolks until smooth. Stir in the non-boiling milk, heat while stirring until the mixture reaches a creamy consistency. Strain through a fine sieve and cool slightly with occasional stirring.

Serve the pudding in bowls, pour sauce over it, and sprinkle chocolate sprinkles on top.
