Fruit Muffins

Ingredients
- 150 g Jaffa Cake cookies with orange filling
- 200 g Flour
- 2 tsp grated orange zest
- 50 g chocolate chips
- 1.5 tsp Baking Powder
- 0.5 tsp Baking soda
- 2 Eggs
- 80 g sugar
- 60 ml plant oil
- 50 ml orange juice
- 150 g yogurt
- 1 mini muffin tin (with 24 cavities or 24 mini paper liners)
- 100 g powdered sugar
- 2 tbsp Orange juice
- 2 star fruits (Carambola)
- 12 physalis
- 12 cherries

Cut the cookies into small pieces. In a bowl combine flour with the cookie pieces, orange zest, chocolate chips, baking powder and baking soda and mix well.

In another bowl lightly whisk the eggs. Add sugar, oil, orange juice and yogurt and stir thoroughly. Pour the dry mixture into the wet batter and stir just until the dry ingredients are moist.

Fill the greased tin cavities or paper liners with the batter. Bake in a preheated oven at 180°C (middle rack) for about 15-20 minutes. Let the muffins rest in the tin for another 5 minutes, then remove and cool on a wire rack.

For the glaze whisk powdered sugar with orange juice. Dip the tops of the muffins into the glaze and let them dry slightly.

Wash the star fruits, slice them, place one slice on each muffin and set physalis or cherries in the center.
