Peach Preserve

Ingredients

  • 1.2 kg ripe peaches
  • 500 g gelatine sugar
  • 1 untreated lemon
  • 1 glass sparkling wine

Instructions

    Score the peaches crosswise, pour hot water over them, let sit for 1 minute, cool and peel. Cut the flesh from the pits and finely dice; puree the rest. Add the gelatine sugar to a pot. Thinly zest the lemon skin, squeeze half of it.

    Add sparkling wine, 1 tbsp lemon juice and 4 pieces of lemon zest to the pot, stir, bring to a boil once, then simmer for 3 more minutes. Remove from heat, pour the hot puree into jars while still hot with one piece of zest, seal with a twist-off lid.
