Ingredients

  • 800 g peaches
  • 500 g gelée sugar
  • 1 vanilla pod
  • 1 tbsp lavender buds

Instructions

    Steep peaches in boiling water, peel, halve, remove pits. Chop peaches finely and mix with the gelée sugar in a pot.

    Slice the vanilla pod lengthwise, scrape out the seeds and stir into the peach mixture; let steep for about 3 hours until juice forms, then puree.

    Fill a muslin bag with lavender and add to the peach mixture. Bring everything to a boil and simmer for about 5 minutes. Remove the muslin bag and fill the jam into hot-washed jars. Seal the jars and place them on their lids for about 15 minutes, then flip over and let cool.
