- 750 g peaches
- 500 g gelatin sugar
- 1 lemon (juice)
- 50 g almond kernels (chopped)
- 1 cinnamon stick
- 40 ml amaretto

Heat the peaches briefly, peel, halve, pit and roughly cube them. This should yield about 500 g. Adjust the amount of gelatin sugar to match this quantity. Mix the sugar and lemon juice into the peaches and cover for about 3 hours.

Meanwhile roast the almonds in a pan until golden brown. Bring the peaches with cinnamon stick, almonds and lemon juice to a boil and simmer for 3-4 minutes while stirring.

Perform a gel test, then remove from heat, stir in Amaretto and discard the cinnamon stick. Fill prepared jars, seal tightly, place on the lids, let cool slightly, then invert and allow to set.
