Ingredients

  • 800 g peach flesh (about 1 kg ripe peaches)
  • 150 ml dry white wine
  • 500 g gelatin sugar (2:1)
  • 1 Vanilla bean
  • 1 tbsp lavender buds (optional)
  • citric acid (as needed)

Instructions

    Soak peaches in boiling water, peel, halve, and remove pits. Chop peaches finely and combine with wine and gelatin sugar in a pot.

    Slice the vanilla bean lengthwise, scrape out the seeds, and stir into the peach mixture; let it infuse for about 3 hours until the peaches have released their juice, then puree finely.
