Ingredients
- 4 peaches
- 10 g ginger
- 1 untreated lemon
- 60 ml ginger liqueur
- 4 tbsp brown sugar
- 250 ml orange juice
- 1 handful basil
- 1 bottle chilled prosecco (750 ml)

Pour boiling water over the peaches, shock them, peel off the skin, halve and core. Dice the flesh into small cubes and place in a large pot. Peel and finely grate the ginger. Wash the lemon hot, thinly slice the zest (as white as possible), and squeeze out the juice. Add the ginger, lemon zest and juice, liqueur, sugar and orange juice to the peaches and mix. Refrigerate for at least 1 hour.

Rinse the basil, shake dry, pluck the leaves and add them to the peaches. Top with chilled prosecco and serve.
