Ingredients
- 350 g peaches
- 250 ml Water
- 80 g sugar
- 1 lemon
- 10 thyme sprigs
- 300 ml Prosecco
- Ice cubes
- peach slices (for garnish)

Wash the peaches, halve them, pit and dice. Combine with water in a blender. Add sugar and blend until smooth. Wash the lemon, grate some zest and juice it. Add both to the peach puree and together with thyme sprigs transfer to a pot. Stir and bring to a boil, then set aside and let steep for 10 minutes. Strain through a sieve to remove all solids.

Cool the liquid well. Mix with Prosecco and fill glasses with ice cubes. Serve garnished with peach slices.
