Pea Tortilla

Ingredients

  • 300 g cooked potatoes
  • 100 g peas
  • butter (for greasing the pan)
  • 5 eggs
  • 1 tbsp Lemon Juice
  • 1 tbsp mixed chopped herbs
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 1 tbsp red chili flakes (for garnish)
  • Green peppercorns (for garnish)

Instructions

    Preheat the oven to 150°C fan. Peel and cut the potatoes into bite‑size pieces. Thaw the peas.

    Grease a small springform pan. Beat the eggs with lemon juice, nutmeg, salt and pepper. Fold in the herbs, peas and potatoes, then pour the mixture into the prepared pan. Gently tap the pan to release any air bubbles. Bake in the preheated oven for about 35 minutes, covering if necessary.

    Cut into pieces before serving and garnish with chili strips or peppercorns.
