Ingredients

  • 225 g Puy lentils
  • 2 celery stalks (thin rings)
  • 1 handful cherry tomatoes (diced)
  • 150 g crumbled feta
  • 1 handful fresh chopped mint
  • 4 tbsp olive or rapeseed oil
  • 1 tsp white wine vinegar
  • 2 tsp Dijon mustard
  • 1 finely chopped shallot
  • salt, pepper

Instructions

    Add the lentils to a pot and pour enough water to just cover them. Cook for 20 minutes over low heat, then drain.

    Combine lentils, celery, tomatoes, and feta in a salad bowl. Whisk all dressing ingredients together, season with salt and pepper, pour over the salad, and garnish with mint.
