Ingredients

  • 1 Mango
  • 3 spring onions
  • 1 red peppercorn
  • 2 tsp organic lemon zest
  • 2-3 tbsp lemon juice
  • salt, pepper
  • 1 tbsp soy sauce
  • 1 kg green asparagus
  • 1 kg white asparagus
  • 10 g butter

Instructions

    Peel the mango, cut off the stone and dice it. Puree two-thirds of the cubes. Trim, wash and finely dice the spring onions. Slice the peppercorn lengthwise, deseed and dice finely.

    Stir the spring onions and peppercorn into the mango puree. Season with 1 tsp lemon zest and juice, salt, pepper and soy sauce.

    Peel both types of asparagus and trim the woody ends. Cook the white asparagus in boiling salted water with butter for 8 minutes covered. Then add the green asparagus and cook for another 6-8 minutes.

    Drain the asparagus, place on a preheated plate and sprinkle with remaining lemon zest. Serve with mango salsa.
