Gnocchi Salad with Vegetables
A fresh gnocchi salad featuring zucchini, red bell pepper, shallots, and basil, dressed in a light vinaigrette. Try this recipe from Spoonsparrow!
Ingredients
- 300 g gnocchi
- Salt
- 2 medium zucchinis
- 2 red bell peppers
- 2 shallots
- 1 bunch Basil
- 6 tbsp Olive oil
- 2 Garlic cloves
- 2 tbsp mild fruit vinegar
- 4 tbsp vegetable broth
- 2 tbsp Tomato paste
- ground pepper
Instructions

Cook the gnocchi in plenty of boiling salted water according to the package instructions, drain and rinse briefly with cold water to cool.

Wash, peel, and slice the zucchini. Clean and dice the bell peppers. Peel and finely cube the shallots. Heat 2 tbsp oil in a pan and sauté the vegetables for about 3-4 minutes over low heat.

Rinse the basil, shake dry, and tear the leaves. Toss the gnocchi with the cooked vegetables and basil leaves.

Peel the garlic and crush it through a press. Whisk together vinegar, broth, tomato paste, and garlic. Stir in the remaining oil and season generously with salt and pepper.
