Pea Balls

Ingredients

  • 800 g peas (frozen)
  • Salt
  • 100 g pistachio nuts
  • 2 stalks Parsley
  • 2 Spring Onions
  • 1 egg
  • 80 g chickpea flour
  • pepper (ground)
  • a splash lemon juice
  • vegetable oil (for frying)

Instructions

    Blanch the peas in salted water briefly. Shock, drain well and roughly chop with a food processor. Transfer to a bowl. Finely chop pistachios and add to the peas. Rinse parsley, shake dry, pluck leaves and finely chop. Wash spring onions, trim and finely chop as well. Mix parsley and egg into the peas.

    Add chickpea flour as needed until the mixture is easily shapeable. Season with salt, pepper and lemon juice. With damp hands form small balls and roll them in remaining chickpea flour. Fry portions in hot oil (about 175°C) for 5-6 minutes. Drain on paper towels and serve with a dip of choice.
