Ingredients
- 400 g freshly pulped peas (or frozen peas)
- 4 large carrots (peeled and cut into sticks)
- 1 handful mint leaves
- butter
- 100 ml heavy cream
- 1 small white onion (finely chopped)
- Salt
- freshly ground pepper
- freshly grated nutmeg
- parmesan
Instructions

Blanch the peas in plenty of boiling salted water for about 5-6 minutes. Drain. Blanch the carrot sticks in boiling salted water for about 3 minutes. Drain.

Melt 1-2 tbsp butter in a pot and sauté the onion until translucent. Add the cream and bring to a brief boil. Remove from heat and season with salt, pepper, and nutmeg.
