Iceberg Salad with Avocado Dressing

Ingredients

  • 1 ripe Avocado
  • 2 tbsp fruit vinegar
  • 100 g Sour cream
  • 1 Garlic clove
  • Salt
  • pepper (from grinder)
  • zucchini (50 g each)
  • carrots (50 g each)
  • 100 g sprouts
  • 100 g iceberg lettuce
  • 1 tbsp oil
  • 1 small red onion
  • 2 tbsp chives curls

Instructions

    For the dressing, peel the avocado, cut it lengthwise and remove the pit. Blend the flesh with 1 tbsp vinegar and sour cream.

    Peel garlic, mash with salt into a paste, stir into the dressing, season with pepper. Wash zucchini and carrot, clean, and grate coarsely.

    Rinse sprouts, drain well, mix with vegetables into the dressing. Wash iceberg lettuce, tear into large pieces and arrange on four plates.

    Drizzle remaining vinegar and oil over the salad, top with sprouts. Peel onion, slice into very thin rings, scatter chives curls over the salad.
