Pasta with Vegetable Sauce

Ingredients

  • 200 g celery sticks (2-3 stalks)
  • 200 g carrots (2-3 pieces)
  • 2 onions
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 large can tomatoes
  • Salt
  • Pepper (freshly ground)
  • 1 tsp Oregano
  • 500 g spaghetti
  • 40 g Parmesan

Instructions

    Wash, peel and finely dice celery and carrots. Peel and finely chop the onions.

    Heat butter and oil in a pan, sauté the vegetables for about 10 minutes while stirring, add tomatoes with juice, roughly break them up with a large knife, season with salt, pepper and oregano, then simmer for about 30 minutes.

    Cook spaghetti according to package instructions in boiling salted water until al dente. Drain. Taste the sauce again. Serve the pasta topped with grated parmesan.
