Penne with Tomato Sauce

Ingredients

  • 400 g penne
  • 500 g cherry tomatoes
  • 1 onion
  • 1 Garlic clove
  • Salt
  • freshly ground pepper
  • 3 tbsp olive oil
  • 50 g grated Parmesan
  • Fresh rosemary (for garnish)
  • 40 g Whole Parmesan

Instructions

    Wash the tomatoes, remove seeds from half of them and dice. Peel and finely chop the onion and garlic clove. Heat oil in a pot, sauté onions and garlic, then add tomato cubes and season with salt and pepper. Cook over medium heat for about 10 minutes. Meanwhile cook pasta in plenty of salted water al dente and drain.

    Add remaining tomatoes to the sauce, warm through, taste. Mix pasta and grated Parmesan together and serve on plates. Optionally grate extra Parmesan with a paring knife (or truffle grater) over the dish and garnish with rosemary.
