Pasta with Fried Sardines

Ingredients
- 250 g fresh green thick beans
- 2 tbsp lemon juice
- 50 ml olive oil
- Salt
- freshly ground pepper
- 1 Red Onion
- 2 tbsp butter
- 400 g pasta (gemelli)
- 2 tbsp chopped parsley
- 16 small sardines (ready to cook)
- 2 tbsp flour
- oil for frying
Instructions

Blanch beans in boiling salted water for about 8-10 minutes, drain and set aside. Whisk lemon juice with salt, pepper, and olive oil; pour over beans and let sit.

Peel onion and slice into thin rings. Heat butter in a wide pan, add onions, sauté briefly, season with salt and pepper, pour in 1/2 cup water, cover and steam for about 5 minutes.

Meanwhile cook pasta in plenty of boiling salted water according to package instructions until al dente.

Pat sardines dry, dust with flour, and quickly fry in hot oil.

Drain pasta and combine with beans, lemon mixture, onions, and herbs. Plate and top with fried sardines.
