Ingredients
- 800 g tomatoes
- 1 Shallot
- 2 Garlic cloves
- 2 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 1 tsp sugar
- 400 g spaghetti
- 100 g grated Parmesan
- basil (for garnish)
Instructions

Blanch the tomatoes for a few seconds, shock in ice water, peel, quarter, seed and dice finely.

Peel and finely chop the shallot and garlic; sauté in hot oil until translucent.

Add the tomatoes, season with salt, pepper and sugar, cover and simmer over low heat for about 15 minutes. Taste and adjust seasoning.

Cook the spaghetti in plenty of boiling salted water to al dente. Drain, let rest briefly, then toss with the tomato sauce. Sprinkle with parmesan and garnish with basil before serving.
