Pasta with Pepper and Parmesan

Ingredients

  • 400 g tagliatelle
  • 5 sage leaves
  • Olive oil (extra virgin)
  • Salt
  • Pepper (freshly ground)
  • 6 tbsp Parmesan (freshly grated)

Instructions

    Cook the tagliatelle in plenty of salted water until al dente and drain, reserving some pasta water.

    Meanwhile, finely slice the sage leaves. Gently heat 3-4 tbsp oil in a small pan and sauté the sage briefly, then remove from heat; do not let the oil get too hot.

    Immediately combine the drained noodles with the sage-infused oil and optionally 1-2 tbsp reserved pasta water, then mix in generous amounts of freshly ground pepper and grated Parmesan. Serve immediately.
