Tagliatelle with Sugar Peas

Ingredients

  • 2 untreated limes
  • 400 g tagliatelles
  • Salt
  • 200 g Sugar snap peas
  • 200 g green peas
  • 1 tbsp Olive Oil
  • 250 ml Whipping Cream
  • 4 tbsp freshly grated Parmesan
  • mint (for garnish)

Instructions

    Rinse the limes hot, grate the zest and squeeze out the juice of one lime.

  2. 2.

    Cook the pasta in boiling salted water until al dente.

  3. 3.

    Wash, trim the snap peas and blanch them with the green peas in boiling salted water for about 4 minutes. Drain, shock in cold water and drain well.

    Heat the oil in a pan and quickly sauté the vegetables. Deglaze with lime juice and cream, season with salt and pepper, and simmer over medium heat for 2 minutes.

    Drain the pasta, arrange on warmed plates, top with the vegetable mixture and sauce, then sprinkle with freshly grated Parmesan and lime zest.

    Serve garnished with mint leaves.
