Ingredients

  • 4 tomatoes
  • 400 g spaghetti
  • Salt
  • Pepper
  • 2 tbsp butter
  • 2 sprigs fresh thyme (or 1/2 tsp dried thyme)
  • 2 tbsp breadcrumbs
  • 3 tbsp black olive paste
  • 0.5 bunch Basil
  • 4 freshly grated Parmesan

Instructions

    Score the tomatoes crosswise, briefly blanch with boiling hot water, then cool and peel. Quarter the tomatoes, removing stems and seeds. Dice the flesh. Cook spaghetti in plenty of salted boiling water until al dente. In the meantime, heat butter in a pan for the sauce.

    Wash thyme, shake dry, strip leaves from stems and add to pan with tomatoes. Simmer gently over low heat for about 5 minutes. Stir in breadcrumbs and olive paste, then simmer for another 5 minutes while stirring. Season lightly with salt and pepper.
