Pasta with Ground Meat Sauce

Ingredients
- 2 bunchs of soup vegetables (depending on size)
- 2 Garlic cloves
- 2 sprigs Rosemary
- 600 g ripe tomatoes
- 2 tbsp olive oil
- 200 g lamb ground meat (or finely diced lamb leg)
- 125 ml vegetable stock
- Salt
- pepper (ground)
- 400 g macaroni

Wash, clean or peel the soup vegetables and cut them into small pieces. Peel the garlic and finely chop it. Wash the rosemary, remove the needles and finely chop it. Wash the tomatoes, halve them, deseed them and dice them very finely.

Heat oil in a pot. Sauté the soup vegetables, garlic and rosemary while stirring. Add the ground meat and cook until crumbly.

Add the tomatoes and stock, season with salt and pepper, cover and simmer over low heat for about 1 hour, stirring occasionally.

Cook the pasta in plenty of salted water to al dente, then drain. Spoon the ragù over the pasta and serve immediately. Fresh grated Parmesan or Pecorino pairs well.
