Spaghetti with Vegetable Sauce

Ingredients

  • 400 g spaghetti
  • 400 g Tomatoes
  • 2 EL olive oil
  • 2 shallots
  • 2 Garlic cloves
  • 400 g zucchini
  • 2 carrots
  • Salt
  • freshly ground pepper
  • 50 g grated Parmesan
  • basil (for garnish)

Instructions

    Briefly blanch the tomatoes, peel, quarter, seed and dice them.

    Peel and finely chop the shallots and garlic.

    Wash, trim and cube the zucchini.

  4. 4.

    Peel and dice the carrots into small cubes.

    Heat olive oil in a pot, sauté the shallots and garlic, add the carrots and zucchini, cook briefly, then add the tomatoes, season with salt and pepper, cover and simmer for about 8 minutes, tasting to adjust seasoning.

    Cook spaghetti in plenty of boiling salted water until al dente. Drain, mix with the sauce, sprinkle with parmesan and garnish with basil leaves before serving.
