Pasta with Ground Meat Sauce

- 1 Carrot
- 1 onion
- 1 Garlic clove
- 1 stalk Celery
- 1 tbsp Olive Oil
- 300 g mixed ground meat
- 1 tbsp Tomato Paste
- 75 ml red wine
- 500 g diced tomatoes (canned)
- 200 ml beef broth
- 1 bay leaf
- 400 g spaghetti
- Salt
- 0.5 tsp Dried oregano
- pepper (ground)
- a pinch sugar
- Cayenne pepper
- parmesan shavings (for serving)

Wash, peel, and finely dice the carrot, onion, garlic, and celery. Sauté the onions in hot oil until translucent, add the remaining vegetable cubes, sauté briefly, then stir in the ground meat. Cook until crumbly, adding tomato paste to brown slightly, then deglaze with red wine. Add tomatoes and broth, bring to a simmer with the bay leaf, cooking gently for about an hour while stirring occasionally.

Cook spaghetti in boiling salted water al dente. If needed, add more broth or reduce sauce further. Season with oregano, salt, pepper, sugar, and cayenne pepper. Toss with spaghetti and sprinkle with parmesan shavings before serving.
